Welcome to another Istrialux blog! Today, we bring you a topic dedicated to one of Istria’s most famous delicacies – truffles.

Truffles are underground fungi that grow in symbiosis with the roots of certain trees. They are special because of their unique aroma and flavor, reminiscent of a fresh forest after the rain with a subtle hint of garlic. When heated, their scent becomes even more intense. If you enjoy rich and earthy flavors, we highly recommend trying dishes with truffles!

Truffles in Two Ways: Black or White – What Makes Them Special?

If you are new to the world of truffles, it is important to know the difference between black and white truffles. Black truffles are firmer and have a stronger flavor that intensifies when heated. They pair excellently with sauces, risottos, and meat dishes. Their versatility makes them an ideal addition to a variety of recipes, and they are especially popular in autumn and winter dishes due to their rich, earthy taste.

On the other hand, white truffles have a milder taste but a stronger and more sophisticated aroma. Dishes featuring white truffles are often considered a true gourmet delight. They are best grated over pasta, carpaccio, or cream soups, and adding just a few fresh slices can give the dish an exceptionally refined flavor.

How to Buy and Store Truffles

Use fresh truffles within 3-5 days, as they begin to lose their aroma and freshness after that period. Wrap them in a paper towel to absorb excess moisture and prevent spoilage, then store them in an airtight glass jar in the refrigerator. Remember to change the paper towel daily to keep the truffles fresh and in optimal condition.

Truffle-infused olive oil should be kept in a dark, cool, and dry place, such as a pantry, to avoid oxidation and the loss of its distinctive aroma. It is important to avoid exposing the oil to direct sunlight, as this can negatively affect its taste and quality.

The Perfect Pairing: Truffles and Wine

In Istria, local wines that complement truffles stand out: Malvazija Istarska, with its floral and fruity notes, perfectly complements lighter dishes, while Teran, with its gentle acidity, highlights the intense flavor of black truffles. Malvazija is particularly recommended with white truffles, paired with homemade pasta or lightly seasoned dishes, while Teran is an ideal match for richer sauces and meat specialties.
